Blanca & Leche
>> Monday, June 16, 2008
I just wanted to share to you some of my simple recipes of some dessert, I made yesterday for our party at my in laws. It's a Maja Blanca and Leche Flan. I'm not a good cook, I just learned from doing it to my one and only chef, my Mama! I missed her cook as well as some of her recipes. Now, I'm trying my best to make my own.
Cooking Instructions:
- In a medium saucepan, sugar, cornstarch, and fresh coconut milk. Boil over slow heat, stirring constantly to prevent lumps, until mixture is clear for about 3-5 minutes.
- Pour hot mixture into prepared dish and allow to set. Sprinkle latik on top. Cool before slicing.
(I used coconut milk as a latik. I rather fried them and wait until its golden dark brown) - Pour latik on the top of the maja and ready to go. You can put grated peanuts too (optional). it is more delicious when its cold.
Inredients:
8 egg yolk
3/4 cup of Condensed milk
3/4 cup of Evaporated milk (Vit. D milk is optional)
Vanilla extract (optional)
For the caramel:
1 cup sugar
3/4 cup water
Cooking Instructions:
-
In a saucepan, mix the sugar & water. Bring to a boil for a few minutes until the sugar caramelize.
-
Pour the caramelized sugar into aluminum moulds - you can use any shape: oval, round or square. Spread the caramel on the bottom of the moulds.
-
Mix well the evaporated milk, condensed milk, egg yolks and vanilla by hand or blender.
-
Pour the mixture on top of the caramel on the aluminum moulds.
-
Cover moulds individually with aluminum foil.
-
I rather used rice cooker for steaming for about 20 minutes
-
Let cool then refrigerate.
You can tell when the Leche Flan is cooked by inserting a knife -if it comes out clean, it is cooked.
