Pancit Guisado

Well, last 2 weeks ago, when I had my 26th birthday, I cooked some Pancit Guisado, and yet I don't eat that much Pancit while I was still in the Philippines, though. Unlike now, I always wanting to eat some, and so I cooked some of it last night again. Now, I'm starting to appreciate Pancit Guisado more and more, especially with bread! hmmm...Now, I cooked some Pancit Canton., well, just have to take some of it for my lunch today! But for now, I wanted to share some recipe...


PANCIT BIHON GUISADO

Minced garlic
Minced onion
Cooking oil ((3-4 tbsp.)
Shredded cabbage
Sliced carrots
Sliced celery ( optional)
Diced chicken (boneless breast) I added tender pork meat too
Peeled and halved shrimp
Sliced mushrooms
Sliced water chestnuts
Rice Stick noodles (available in Chinese section)
1/2 c. soy sauce
1 chicken broth cubes

Saute onion and garlic in oil until transparent. Add chicken and stir until brown. Add vegetables; saute 2-3 minutes. Add shrimp. Add soy sauce and broth; simmer 1 minute.

Add rice stick noodles. Cover, simmer until noodles are not brittle, 3-4 minutes. If needed add more broth or soy sauce to taste.
